Go Greek with this tangy, tasty take on the Classic Greek Salad.
½ bag of Eat Smart’s Garden Medley Blend
¼ cup of red onion, thinly sliced
¼ cup of cucumber sliced into ¼” thick rounds and cut in half
¼ cup of cherry tomatoes, halved
¼ cup of Kalamata olives, pitted
¼ cup of feta cheese
¼ cup of your favorite red wine vinaigrette
Salt and pepper to taste
In a large mixing bowl, add all ingredients and toss until salad is evenly coated with dressing. Season to taste with salt and pepper. Serve.
