Farro With Mushrooms & Greens

Try this hearty meal with your favorite selection of grains.


½ bag of Eat Smart’s Fresh Harvest Blend

1 cup of button mushrooms, sliced

1 cup of yellow onion, sliced

2 cups 2 cups of cooked farro*, cooled

1 tbsp minced garlic

Juice of 1 lemon

2 tbsp of olive oil

Salt and Pepper to taste

*Farro can be replaced with a different hearty grain (e.g., brown rice, wild rice, wheat berry, barley, etc.)


Heat a large skillet over high heat with oil. Once oil starts to lightly smoke, add mushrooms and sauté for 1 minute. Add onions and sauté until both mushrooms and onions are golden brown and tender. Add garlic and greens to mushroom and onion mix and sauté for 1 minute. Add the cooked farro and sauté for 2 minutes, until farro is warmed through. Season with salt, pepper, and lemon juice to taste. Toss to combine.
