Stuffed Shells

Boost this family-style favorite with the four superfoods in our Garden Medley Blend.


1 bag of Eat Smart’s Garden Medley Blend

1/2 box of jumbo pasta shells, approximately 20 shells

1 24 oz jar of your favorite marinara sauce

1 pint of fresh ricotta

1 cup of grated Parmesan cheese

1 cup of shredded mozzarella cheese

1 tbsp of minced garlic

3 large eggs

1 tsp salt

1/2 tsp black pepper

1 tbsp olive oil


Preheat oven to 400 degrees. Cook pasta shells per package instruction, drain and set aside. Heat a large skillet over medium high heat, then add oil. Once oil is hot, add garlic and greens and sauté until just tender, about 2 minutes. Remove from heat and let greens cool. Add ricotta, half the Parmesan, and half the mozzarella into a mixing bowl and combine with a rubber spatula. Add cooled greens and mix to combine. Add eggs, salt and pepper and mix to combine. Place half of the jar of sauce on the bottom of a 9×11” casserole dish. Take roughly 2 Tbsp of cheese and greens blend mixture and stuff inside each shell, placing them open side up into baking dish. Spread remaining sauce evenly over shells. Sprinkle with remaining mozzarella and Parmesan. Cover with foil and bake for 20-30 minutes, or until noodles are tender and filling is set. Remove foil and bake for an additional 10 minutes, allowing cheese to melt and get slightly golden brown. Remove from oven and serve.
